Out of Pasta Sauce! No problem, we make!

So last night we wanted to make a pasta and realized we were all out of Pasta Sauce. We did however have a can of diced tomatoes. So I had an onion which I diced, sliced up some button mushrooms. Got some Italian seasoning and some tomato paste.


1. Saute 1/2 a diced onion, 5 minutes on medium heat with some avacado oil in a medium pan.

2. Add 4-5 sliced button mushrooms to the onions and stir cooking them until they are browned slightly.

3. Add a can of diced tomatoes and let it cook down for about 8 mins stirring occasionally.

4. Add Italian seasoning or whatever you have on hand like, thyme, garlic, salt, pepper, chilli pepper flakes. What works for you. Garlic and onion powder dashes work well.

5. Add 2-3 table spoons of tomato paste and stir.

6. If the sauce is getting thick and it needs some water or liquid vegetable stock to thin it out so it doesn't dry out. Let it cook for another 5 minutes with the lid closed and lower to a simmer.

7. Add to your favorite pasta and enjoy!


Here's mine! I topped it with some nutritional yeast for the parmesan flavor.
